Salmon with Almond Vinegarette

I found this recipe in the Cooks Illustrated May/June 2009 issue. It is so delicious on Salmon. We’ve recently tried it on Halibut as well, and it was equally as good.

Salmon with Almond Vinegarette

Ingredients:

1/3 cup almonds, toasted (saute in skillet over low/medium heat until golden brown)

2 teaspoons honey

1 teaspoon Dijon

4 teaspoons white wine vinegar

1 medium shallot, minced

1/3 cup extra virgin olive oil

1 tablespoon cold water

1 tablespoon chopped fresh tarragon

Salt and Pepper to taste

Recipe:

Place almonds, honey, mustard, vinegar, and shallot in a food processor and chop until blended, but not mushy. (Want to keep the crunch of the almonds). Whisk is olive oil until blended. Add water and tarragon and continue to mix. Season with salt and pepper. Serve over freshly grilled or broiled fish.
